SAUCES, GRAVIES AND CHEESES:

Cheddar Cheese (Cashew Cheese)
New Favorite Cheese Recipe!

3/4 cup cashews
1 Tbsp sesame seeds
1 (2 oz.) jar pimento (I love to use the roasted pimentos)
3 Tbsp Braggs Liquid Aminos
1 tsp yeast flakes (heaping)
1/2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 medium cooked potato or 1/2 to 1 cup rice (can use brown rice flour)
1/4 cup lemon juice
1 cup boiling water

Blend all ingredients with boiling water until smooth. 

Is It Really Vegan Cheese?

½ C raw cashews
1 C hot water
1 4 oz jar pimentos
3 Tb brewers yeast or food yeast
1 tsp onion powder
½ tsp garlic powder
1 ½ C cooked brown rice
2 Tb lemon juice
1 cooked potato or potato flakes (equivalent to one potato)
1 ½ C water

Blend cashew and water until smooth. If too thick add more water to make sure blender blades keep moving. Add seasoning, pimento (or red bell pepper), rice and more water if needed. Add hot cooked potato or potato flakes and keep blending until very smooth (10 min). Drizzle over potatoes, your favorite Mexican dish or broccoli also makes a great corn chip dip too. Enjoy!

Sunflower Rice Dressing
Our children called this "chip dip".  It was one of their very favorite dressings.

  1. 1 c. hot water
  2. 1/2 c. raw sunflower seeds
  3. 1/2 c. cooked brown rice
  4. 1 T brewers yeast
  5. 1/4 c. lemon juice
  6. 1 tsp salt
  7. 1 tsp onion powder
  8. 1 tsp garlic powder
  9. 5 shakes paprika
  10. 5 shakes dill weed
Whiz all ingredients in blender until very smooth, approximatly 5 minuets.  Cool and serve on salad, as chip dips, veggie dip, potatoes or artichokes.

  "Chicken" Gravy

1 ½ C Raw cashews
1/3 C Cornstarch
3 Tb McKay's Chicken-style Seasoning
1/3 C Yeast flakes
2 tsp Onion powder
Salt to taste

  • Blend all ingredients in the blender with two cups of water until smooth.
  • Bring 6 cups of water to boil.
  • Add mixture in blender to boiling water and thicken on medium heat, stirring constantly.

Delicious served over toast, rice, or baked potatoes.
